Central to the processing of both game birds & deer is a well designed Game Larder, which allows for quick, efficient handling, processing & chilled storage.
This recently installed Game Larder has offered a large sporting estate just that, giving them the ability to cope with its volume & throughput all the way through to the food chain.
The estate approached us with a brief to meet their current requirement & the new Game Larder larder was designed around weekly estimated numbers, ensuring that the movement of carcasses around the Game Larder would not exceed the capacity of each section.
The 12mtr x 6.8mtr building was made up of two separate modules which were manufactured in our factory, transported to site on an articulated lorry, unloaded & positioned by crane.
Final groundworks were completed after installation to finish the project, which provides the estate with a state-of-the-art facility.
It comprises :
- Deer prep room
- Deer chiller
- Venison processing room
- Separate Game bird chiller
It has a http://www.tononmeatrail.com running throughout, with both in-line track scales & an integrated hoist, which reduces the need for manual handling & makes carcass preparation more efficient. As always electrics, plumbing, refrigeration, drainage, sinks & wash-down equipment are all installed & commissioned in our factory, prior to delivery. It also has a vision panel between the Deer prep room & Venison processing area to allow for a light & pleasant working environment.
