We have recently completed the construction of a new meat storage & handling facility for the Butchery at Knepp Wild Range Meat.
As the popularity of their range of roasting joints, sausages, steaks, burgers ( & more adventurous cuts! ) from their pasture-fed, organic cattle, pigs, Red & Fallow deer developed it became clear that expansion to their butchery would be required.
They approached Fisher UK to take on the project & working closely with Knepp we formulated a design plan & layout to suit the manner in which they operate.
Our teams travelled to West Sussex as construction took place onsite, within an existing building.
Internally walls & ceilings were created using insulated panels, forming new hanging chillers & storage areas.
We installed a free-standing meat rail system for 160 beef quarters, using Tonon with whom we have an exclusive UK dealership.
Amongst a number of technical alterations to the current facility we converted 3 fridges to new CO2 systems, installed a new refrigeration system to the hanging chiller & holding freezer, also on CO2, & added a Stiebel Eltron heat recovery system.
Externally we employed contractors to lay a concrete plinth in which to mount the 7 compressors required to support the refrigeration.
The building was finished with slip resistant polyurethane resin flooring throughout & a new loading arm was fitted.
This has created approximately 25mtr x 12mtr bespoke storage & handling facility for the busy team at Knepp Wild Range Meat.
